Durum wheat is known for its high protein content and natural humidity. This makes our pasta not only flavorful but also incredibly satisfying. “You end up technically eating a little less pasta when you’re using fresh pasta because it has this natural humidity… You’re eating less flour in a way, but you’re getting the same amount of food,” says Henry Kennah, our founder.
